One of the things I’ve discovered on this journey towards a healthier lifestyle is protein pancakes. There’s a million different recipes for protein pancakes, but these have been my favorite to-date. They most closely resemble a real pancake texture, despite the fact there is no flour in them!
You can use whatever protein powder you’ve got on hand, I recommend using vanilla. But I’ve used chocolate and it is delicious as well. I just recently discovered my new favorite protein powder, Isopure. They offer low carb and zero carb flavors which are delicious! The vanilla tastes like cake mix when mixed with some milk. So, naturally, I knew it would be delicious in these pancakes too!

Ingredients

- 2 oz cream cheese
- 2 eggs
- 1 scoop vanilla or chocolate protein powder (I like Isopure)
- toppings of choice
Instructions
- Put all ingredients in a blender or use your immersion blender!!, blend until smooth. Let rest for 2 minutes.
- Pour ΒΌ of the batter into a hot pan greased with butter or pam spray. Cook for 2-3 minutes until golden brown, flip. Cook for an additional 2-3 minutes on the other side. Repeat with the rest of the batter.
- Serve with toppings of your choice, I like peanut butter!
