Meal Planning for Mom & Baby

Shortly after returning back to work post having Levi, I quickly realized that time in the mornings was of the essence. In order to get out the door on time, I needed to be organized, have a plan, and not waste any precious time on anything that wasn’t essential. I’ve shared on the blog before tips from a bunch of moms for streamlining your morning routine. And while I have to say, my morning routine isn’t exactly the most well oiled machine, it has improved a bunch in the past couple of weeks. 

One of the things that has greatly changed the game was planning meals for myself in the mornings as well as for Levi just to have on hand. I don’t have *much* time in the morning to make myself breakfast and I feel like it is important to start your day off with a good breakfast, fuel for your day. Besides breakfast, I also like to have some things on hand for Levi. It never fails that life happens. Levi most of the time eats whatever we eat, but sometimes I don’t get supper made in time for Levi to eat and I don’t have leftovers. It is so handy to have things in the freezer to easily heat up and feed Levi. 

I know that this a. requires set aside time to batch make some recipes and b. requires planning and I wanted to take one of the steps of planning out of it for you. I am sharing some of my favorite recipes to have on hand for my breakfast as well as for Levi’s breakfast and lunch or dinner. Many of these are great to freeze as well. The more you plan ahead, the more mornings will feel less hectic and more enjoyable!! 

BREAKFAST

Typically now Levi eats eggs for breakfast every single morning and finishes his breakfast up with some yogurt. He is a breakfast creature of habit just like his father, which is A-OKAY by me. I always know what he wants and what he likes. I still like to have breakfast type foods in the freezer for easy heat and go.

Yogurt + Granola + Fruit (can add in things like protein powder, hemp seeds, chia seeds, nuts, etc.)

Eggs (if you make for your kids anyway) serve on top of leftover roasted veggies

LUNCH & DINNER

I try to keep a variety of things on hand in the freezer in small portions so I can just grab & heat and have a homemade meal for Levi on demand.
