Rhubarb BBQ Sauce

sweet and tart rhubarb bbq sauce

Ingredients

  • 1 tablespoon canola oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups rhubarb, diced
  • 1 cup water
  • 1 1/2 cups ketchup
  • 1 cup brown sugar
  • 1 cup dark corn syrup
  • 1 1/2 tablespoons apple cider vinegar
  • 1/4 cup worcestershire sauce
  • 2 tablespoons dijon mustard
  • 3 teaspoons hot sauce
  • salt to taste

Instructions

  1. Heat a medium saucepan over medium high heat. Add the canola oil. Once hot, saute the onion for 3-5 minutes or until softened. Add the garlic and saute an additional minute.
  2. Add the rhubarb and the water. Reduce heat to medium. Add remaining ingredients. Bring to boil.
  3. Let simmer 20 minutes or until rhubarb has become tender and broken down. Remove from heat.
  4. Using either a food processor or immersion blender, puree the bbq sauce until smooth. Ladle into sterilized jars. Use a knife to ensure you remove any air bubbles, wipe the rims, and screw on lids.
  5. Process in a hot water bath for 10 minutes or cool and keep in refrigerator.

Notes

  • Yields about 2 pints. Feel free to adjust ingredients to your tastes!
