Lately it seemed like everywhere I turned, everyone was raving about these Evol Foods meals. I had not even heard of the company, let alone seen their products in the stores. I stalked their website for a bit and when I saw they put out this Truffle Mac and Cheese, I fell in love. The lovely people at Evol Foods agreed to send me out some samples to try of various meals and small plates such as their new street tacos.
What is Evol Foods?
Evol Foods has made it their passion and dedication to change the way we view freezer foods. Here’s a quote from their website: “Freezing used to be a way to miraculously preserve perishable foods. It still is. But somewhere along the way, frozen food got a bad name. Maybe it’s because we started to freeze everything, like batteries, panty hose and disturbingly symmetrical “Salisbury steaks.” Well, we think freezing is still pretty amazing. So, we’re making it cool again by freezing fresh, simple ingredients in order for busy people to eat better, healthier food whenever they want.”
And their mission statement clearly sums up exactly what they aim to do.
Two weekends ago, having spent five straight days staining the windows in our house, I was pleasantly surprised elated to find them in the freezer. The last thing I wanted to do after 12 hours of staining was cook, so pre-made food it was. I know, I cried a little too as I popped the Truffle Parmesan Mac & Cheese in the microwave.

While the pasta didn’t come out of the microwave looking like they do on the box, I will say, I was pleasantly surprised how well it held up in the microwave. The container did get a bit soggy, so I transfered it to a bowl and added some parsley for color.
I thoroughly enjoyed this pasta! The panko bread crumbs adds a great crunch to the creaminess of the cheese and pasta. I was quite frankly amazed at the many layers of flavor packed into and preserved in a frozen meal!
Evol has done a fantastic job of preserving and layering flavor in all their frozen meals. If you remember back to my Evol Street Taco review, the flavors didn’t lack in that meal either. I love having these on hand for nights when I just can’t seem to find time to cook… which isn’t often! But when it does, it is imperative to have a flavorful and not lacking frozen meal to serve.

I recently tried the Evol Truffle Parmesan Mac and Cheese. I generally dislike frozen foods but I’m a sucker for truffle mac, so I decided to try it. It was really delicious and the texture was good. I look forward to trying some other Evol offerings. This may become my “go to” brand when I don’t have time to cook.
