Shrimp Quesadillas

Ingredients

  • Flour Tortillas
  • 1214 Shrimp, Peeled And Deveined
  • 4 ounces Mexican Red Sauce (El Pato is best)
  • Large Onion
  • 2 Anaheim Peppers (or Bell Peppers)
  • 2 cups Cheese, Grated (I used Cheddar & Jack)
  • 2 Tablespoons Butter

Instructions

  1. Pour red sauce over shrimp. Set aside.
  2. Chop onion and peppers into slices.
  3. Heat skillet over high heat. Pour in the shrimp with the sauce. Cook, stirring only occasionally, until shrimp is opaque. Remove from skillet and chop into bite-size pieces.
  4. Return skillet to high heat and add butter. Cook onions and peppers over high heat until they start to get charred. Remove from skillet and set aside.
  5. Wipe out skillet or in a separate skillet, heat butter. Place a tortilla in the skillet, then layer on ingredients: cheese, onions and peppers, and shrimp. Top with a little more cheese and a second tortilla. Cook on both sides until golden brown.
  6. Remove from skillet and slice into wedges. Serve with mango salsa!
