Cheesy Sweet Potato Sausage Spread

Spread

  • 2 cups sweet potato, 1/4 inch cubes
  • 3 tablespoons olive oil
  • 1 pound sausage (I used italian)
  • 1/4 cup onion, chopped
  • 1/4 cup red bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 oz. Colby Jack cheese, shredded
  • 8 oz. cream cheese
  • 1 (15 oz.) can Italian diced tomatoes (slightly drained)

Toasted Baguettes

  • 1 baguette
  • 1 tsp. Italian seasoning
  • 1/2 cup olive oil
  • 12 oz. parmesan cheese, shredded

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine olive oil and cayenne pepper. Toss sweet potatoes gently to coat. Spread evenly on a baking pan and bake 350 degrees for 35-40 min or until tender.
  3. In a medium frying pan, add sausage, chopped onion, and chopped red bell pepper. Cook until brown. Drain grease and add garlic. Cook for 2-3 min.
  4. Add cream cheese, ΒΌ cup of Colby Jack cheese, roasted sweet potatoes and canned tomatoes. Stir to combine.
  5. Add sausage mixture to a greased baking dish. Top with the remaining Colby jack cheese, and bake until cheese is melted, approx. 5 minutes.
  6. Serve with Toasted Baguettes

Toasted Baguettes

  1. Turn up oven to 375 degrees.
  2. Cut French loaf in slices
  3. In a small bowl add Italian seasoning to olive oil and mix well.
  4. Brush olive oil mixture onto each slice of bread and place on baking sheet.
  5. Sprinkle finely shredded parmesan cheese to cover bread pieces.
  6. Bake at 375 degrees for 7 min. or until toasty.
