Southwestern Quinoa Skillet

southwestern style quinoa one pan skillet meal in 30 minutes

Ingredients

  • 1 tablespoon olive oil
  • 1 recipe of sofrito (see below)
  • 1/2 cup quinoa, uncooked
  • 1 cup water or chicken broth
  • 2 cups cooked, shredded chicken
  • 1/2 (15 ounce can) black beans
  • salt and pepper to taste
  • 1/2 cup cheddar cheese
  • Sofrito Recipe
  • 1 carrot, chopped
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic
  • 1 medium tomato (or 1/2 15 ounce can) diced tomatoes
  • 1 tablespoon cilantro

Instructions

  1. Sofrito
  2. To make the sofrito, add all ingredients into a blender or food processor and pulse until minced. Set aside.
  3. Skillet
  4. Heat a large skillet over medium high heat, add the oil to the pan. Once hot, add the sofrito and saute 1-2 minutes or until softened. Add the quinoa and the water or chicken broth.
  5. Add the shredded chicken and black beans. Salt and pepper to taste.
  6. Reduce heat to medium low and cover. Cook for 15-20 minutes or until quinoa is fully cooked and softened.
  7. Add the cheddar cheese over the top, cover again for 4-5 minutes or until cheese is melted.
  8. Garnish with your favorite toppings such as sour cream, cilantro, salsa, etc.
  9. Serve and enjoy!

Notes

  • Note: You can sub any sort of meat into this dish and it would be lovely!
