Smoked Gouda Mac and Cheese

a rich, decadent mac and cheese featuring smoked gouda and country ham

Ingredients

  • 8 ounces country ham, diced
  • 1/2 onion, diced
  • 2 tablespoons flour
  • 1 quart heavy cream
  • 1 pound smoked Gouda cheese, shredded
  • 1/2 tablespoon cayenne pepper
  • 1 1/2 teaspoons nutmeg
  • Pepper to taste
  • 20 ounces elbow macaroni, cooked until al dente

Instructions

  1. In a large heavy bottomed pan, cook the country ham until most of the fat is released (render) over low heat. Add the onion, let cook for 3-5 minutes then add the flour. Whisk in the heavy cream. Let the mixture simmer until reduced by about one third. Be careful not to boil or the cream will burn.
  2. Once reduced, add the gouda and seasonings. Cook for another 3-4 minutes to let the cheese melt fully. Stir in the elbow macaroni and take off the heat.
  3. Garnish with chives and enjoy!

Notes

  • If not using country ham, add salt.
