Red Beans and Rice

  • 2 teaspoons olive oil
  • 4 links smoked sausage (Andouille), cut into 1/2 inch rounds
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 (15 oz.) can red beans, drained and rinsed
  • 1 (15 oz.) can diced tomatoes with juice
  • salt and pepper to taste
  • 2 cups minute rice (brown or white)
  • 2 cups chicken broth
  • 1/4 teaspoon cayenne pepper
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon hot sauce (I use Frank’s)
  • parsley to garnish

Instructions

  1. Heat olive oil in a large skillet or dutch oven over medium heat. Add the sliced sausages and cook for 3-4 minutes or until slightly browned. Add the onion and bell pepper. Cook until onions start to become translucent. Add garlic and rice. Stir in the red beans, diced tomatoes, chicken broth, hot sauce, and all spices. Cook for 20 – 25 minutes or until the rice is tender and most of the chicken broth has been absorbed. If necessary, add more chicken broth.
  2. Garnish with parsley and serve.
