Poblano Corn Fritters

sweet corn fritters with poblano peppers & honey chipotle dipping sauce

  • Corn Fritters
  • 2 cups corn
  • 1/2 cup corn flour (you can use all purpose flour too)
  • 1 egg
  • 1/2 cup cheddar, grated
  • 2 ounces cream cheese, softened
  • 1 large poblano pepper, diced
  • 1 teaspoon smoked paprika
  • 1 tablespoon Mexican oregano
  • salt and pepper to taste
  • 2 green onions, thinly sliced
  • juice and zest of 1 lime
  • 2 tablespoons oil (I used canola)
  • Honey Chipotle Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup honey
  • 1 1/2 teaspoon minced chipotle chile in adobo sauce (or 1 teaspoon chipotle chile powder)

Instructions

  1. Corn Fritters
  2. Mix the corn, flour, egg, cheddar cheese, cream cheese, poblanos, smoked paprika, coriander, green onion, cilantro and lime juice in a bowl. Salt and pepper to taste.
  3. Heat the oil in a large pan over medium heat and form patties using about a 1/4 cup of the mixture. Cook the patties until golden brown on both sides, about 2-3 minutes per side.
  4. Honey Chipotle Sauce
  5. In a small bowl, stir together the mayonnaise, honey and minced chipotle chile. Mix well and set aside until serving.

Notes

  • Be sure to use enough flour to ensure patties hold together, feel free to add more or less, depending.
