Pasta with Vodka Sauce

  • 1 pound penne pasta
  • 3 tablespoons butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup vodka
  • 14 oz. tomato puree
  • 1 tablespoon tomato paste
  • 1 cup heavy cream
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 cup Parmesan cheese, grated
  • 3 tablespoons basil, thinly sliced

Instructions

  1. Cook pasta according to package directions. When complete, drain the pasta, and reserve 1 cup of pasta water in case sauce is too thick. While pasta is cooking, start on the sauce.
  2. In a large pan over medium heat, add olive oil and butter. Add in garlic and onions. Stir and allow to cook for several minutes or until slightly browned.
  3. Pour in vodka. Stir and cook off for three minutes. Add in tomato puree and paste. Stir.
  4. Reduce heat to low and pour in heavy cream. Allow to simmer, careful not to burn. Add in red pepper flakes, salt, and pepper to taste.
  5. Add cooked pasta to the sauce, tossing to combine. Stir in Parmesan cheese.
  6. Pour mixture into serving bowl. Garnish with more Parmesan cheese and sliced basil.
  7. Enjoy.
