Semolina Pasta Dough

Ingredients

  • 1 1/2 cups semolina flour
  • 1/2 teaspoon salt
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 2 eggs, beaten

Instructions

  1. In a stand mixer or food processor, combine semolina and salt. Mix or pulse for 30 seconds. Add beaten eggs, water and oil. Mix or pulse to make a stiff dough. Pour out onto a lightly floured surface and knead 10 minutes or until dough is elastic.
  2. Wrap dough in plastic wrap and let rest for 20 minutes. On a lightly floured surface roll out to desired thickness or put through pasta machine to form thin sheets.
