Ingredients

2 cups plums (about 6-7), halved
1 cup ketchup
1⁄4 cup shallot, chopped
1⁄4 cup honey
2 1⁄2 tablespoons red wine vinegar
1 teaspoon smoked paprika
2 teaspoons Dijon mustard
salt and pepper to taste
Instructions
Bring all ingredients to a boil in a medium saucepan. Reduce heat and simmer 15-20 minutes or until thick, stirring occasionally.
Use immersion blender to blender until smooth. Or if you have no immersion blender, cool for about 10 minutes, place mixture in a food processor or blender and process until smooth.
