Combine all ingredients in a small saucepan. Simmer 10 minutes over medium low heat. Mash peaches to release juices. Strain over mesh strainer. Cool before using.
Honey Peach Whiskey Sour
Pour all ingredients into a cocktail shaker.
If using egg white, dry shake (with no ice) vigorously to get the white foam from the egg white. Then add ice and shake again. Pour into a lowball glass, over ice if you like.
If not using egg white, pour over ice and shake well, then pour into a lowball glass, over ice if you like.
You can adjust the ratio of honey peach syrup and lemon juice to taste.
